Japanese Simmered Mushrooms and Eggplants

INGREDIENTS

  • Wild Vegetables

    • 🍄 Mushrooms 150g (your preferred variety)
    • 🍆 Eggplant 1 (cut into chunks)
  • Seasonings

    • 🥢 Soy sauce - 2 tablespoons
    • Mirin - 2 tablespoons
    • 🍭 Sugar - 1 teaspoon
    • Dashi stock - 200ml

STEPS

Put the dashi stock, mirin, sugar, and soy sauce in a pot and heat over low heat to make the simmering broth.

Add the eggplant, make sure it's immersed in the broth, and simmer for 5 minutes.

Add the mushrooms and simmer for another 5 minutes.

Turn off the heat and let it sit covered for 5 minutes to steep.
