INGREDIENTS

  • Vegetables

    • 50g mizuna
    • 2 shiitake mushrooms
    • 100g enoki mushrooms
  • Oil

    • 1/2 tbsp salad oil
  • Garnish

    • A pinch of chopped green onion
  • Meat Mixture

    • 200g ground beef and pork

    • đź§‚ A pinch of salt and pepper
    • 3 tbsp breadcrumbs
    • 🥛 3 tbsp milk
  • Sauce

    • 50cc mentsuyu (3x concentrated)
    • 300cc water
  • Thickener

    • 1 tbsp potato starch
    • 1 tbsp water

STEPS

Mince the onion. Cut mizuna into 4cm pieces. Slice shiitake mushrooms thinly and separate the enoki mushrooms into smaller pieces.

Mix breadcrumbs and milk in a bowl and let sit for 3 minutes. Add ground meat, onion, salt, and pepper, then mix until sticky.

Divide the mixture into 4 portions, shape into oval patties, and indent the center slightly.

Heat salad oil in a pan over medium heat. Cook patties for 2–3 minutes per side until browned.

Add mentsuyu and water to the pan, bring to a boil, then add mushrooms. Cover and simmer on low heat for 10 minutes.

Remove the patties and thicken the sauce by adding potato starch mixed with water. Stir for 2–3 minutes until thickened.

Plate the mizuna and patties, pour the sauce over the patties, and garnish with chopped green onion.
