INGREDIENTS

  • Fish

    • 2 barracuda fish (360g)
    • 🧂 Pinch of salt and pepper
    • Sufficient amount of flour
  • Seasoning

    • 🧄 1 clove garlic, sliced
    • 1/2 tbsp olive oil
  • Lemon Butter Sauce

    • 1 tbsp sake
    • 🍋 1/2 lemon, zest and juice
    • 🧂 1/4 tsp salt
    • 🧂 Pinch of pepper
    • 🧈 20g salted butter
  • Garnish

    • 🌿 Pinch of chopped parsley

Slice the garlic thinly. Zest the lemon and squeeze its juice.

Prepare the barracuda by removing the head and tail, then cut in half. Season with salt and pepper, and coat with flour.

Heat olive oil and garlic in a pan until fragrant and golden brown. Remove garlic, then add the barracuda. Cook on medium heat for 4–5 minutes until golden, flip, and cook for another 3–4 minutes until fully cooked. Remove fish and wipe excess oil from the pan.

Add sake, lemon zest, and lemon juice to the pan. Stir in the remaining sauce ingredients and heat on low until thickened. Pour the sauce over the barracuda and garnish with parsley.
