INGREDIENTS

  • Fish

    • 🐟 6 sardines (720g)
  • Seasoning

    • 🧂 Pinch of salt and pepper
  • Breading

    • 🌾 3 tbsp all-purpose flour
    • 🥚 1 beaten egg
    • 🍞 1/2 cup breadcrumbs
    • 🧀 2 tbsp grated Parmesan cheese
    • 1 tsp dried basil
  • Cooking Oil

    • Enough vegetable oil for frying
  • Garnish

    • 20g baby leaf greens
    • 🍅 4 cherry tomatoes
    • 🍋 1/4 lemon (wedged)

STEPS

Prepare the sardines by removing the head, cutting along the belly, cleaning out the insides, and washing thoroughly. Open the sardines along the backbone and remove the bones. Cut each sardine in half.

Pat the sardines dry and season with salt and pepper. Roll each sardine and secure the end with a toothpick.

Mix the breadcrumbs, Parmesan cheese, and dried basil in a shallow dish.

Coat the sardines in flour, then dip in beaten egg, and finally coat with the breadcrumb mixture.

Heat vegetable oil in a frying pan to 170°C (340°F). Fry the sardines for 3–4 minutes until golden brown. Remove the toothpicks.

Plate the fried sardines and garnish with baby leaf greens, cherry tomatoes, and lemon wedges.
