INGREDIENTS
Fish
- 🐟 4 sardines (480g)
Condiments
- 10g sansho tsukudani
- 2 slices ginger
Seasoning
- 2 tbsp sake
- 1 tbsp mirin
- 🍬 1 tsp sugar
- 1.5 tbsp soy sauce
- 💧 150ml water
STEPS
Cut the ginger into thin strips.
Prepare the sardines by removing scales, cutting off the heads, slicing into bite-sized pieces, and removing the innards. Wash thoroughly and pat dry.
In a pot, combine the seasoning ingredients (sake, mirin, sugar, soy sauce, water), sansho tsukudani, and ginger. Heat over medium heat until boiling.
Add the sardines to the pot, ensuring they do not overlap. Cover with a drop lid and simmer over low heat for about 12 minutes until the liquid reduces.
