INGREDIENTS
Fish
- Bones from 6 iwashi fish
Starch
- Potato starch, as needed
Oil
- Salad oil, as needed
Seasoning
- đź§‚ A pinch of salt and pepper
Fruit
- 🍋 1 wedge of lemon
STEPS
Wash the iwashi bones under water to remove dirt, then pat dry with kitchen paper. Coat both sides with potato starch.
Heat about 2cm of salad oil in a pot to 160°C. Fry the iwashi bones for 5–6 minutes, flipping occasionally, until golden and crispy.
Sprinkle with salt and pepper, plate, and serve with a wedge of lemon.
