Combine water and beans in a multi-functional pressure cooker. Close and lock the lid. Select high pressure; set timer for 15 minutes. Allow 10-15 minutes for pressure to build.

Release pressure naturally for 20 minutes, then quick-release remaining pressure. Unlock and remove the lid. Drain and rinse beans, set aside. Rinse and wipe Instant Pot insert.

Select the Sauté function. Heat olive oil until shimmering, 2-3 minutes. Add salt pork, bacon, and onion; cook until fat renders, 1-2 minutes. Pour in 1/2 cup water and scrape browned bits. Turn off Instant Pot.

Whisk molasses, ketchup, brown sugar, mustard, and 1 cup water. Return beans to the pot with the mixture. Stir gently, close lid, select high pressure for 35 minutes.

Release pressure naturally for 20 minutes, then quick-release remaining pressure. Unlock lid. Allow beans to thicken as they cool. Serve immediately or freeze for later.
