STEPS
Place the oyster flat side up. Insert a dining knife into the gap between the top and bottom shells, gently moving it back and forth while sliding along the top shell. Cut the central muscle and detach the meat from the shell, removing the top shell.
Slide the knife along the inside of the bottom shell, cutting the muscle and detaching the meat completely.
