INGREDIENTS

  • Meat

    • 100g thinly sliced pork
  • Tofu

    • 100g silken tofu
  • Egg

    • 🥚 1 beaten egg
  • Vegetables

    • 100g enoki mushrooms
    • 🥕 50g julienned carrot
    • 50g sliced bamboo shoots
  • Broth

    • đź’§ 600ml water
    • 1/2 tsp chicken stock powder
  • Seasoning

    • 1 tbsp sake
    • 🍬 1/2 tsp sugar
    • 2 tbsp vinegar
    • đź§‚ 1 1/2 tbsp soy sauce
    • 1 tsp chili oil
    • A pinch of pepper
  • Thickener

    • 1 tbsp cornstarch
    • đź’§ 1 tbsp water

STEPS

Trim the root of enoki mushrooms, cut into 2cm pieces, and separate. Julienne the carrot into thin strips.

Cut the tofu into 1cm thick rectangular strips.

Slice the pork into 1cm wide strips.

In a pot, add pork, enoki mushrooms, carrot, bamboo shoots, chicken stock powder, and water. Heat over medium heat until it boils. Skim off any foam, cover, and simmer on low heat for 6-7 minutes.

Add the seasonings (sake, sugar, vinegar, soy sauce, chili oil, and pepper) and mix well. Add the tofu and heat over medium heat until warmed through.

Stir in the cornstarch slurry (cornstarch mixed with water) and cook until the soup thickens.

Pour the beaten egg in a circular motion and let it set slightly before stirring gently. Serve in bowls.
