INGREDIENTS
Fish
- 🐟 4 fillets horse mackerel (140g)
Vegetables
- 1/2 red paprika
- 🧅 1/2 onion
- 🥒 1/2 zucchini
- 🎃 4 slices pumpkin (60g)
Seasoning
- 🧂 Pinch of salt and pepper
- 1 tbsp cornstarch
- Adequate amount of salad oil
Sauce
- 🍬 2 tbsp sugar
- 1 1/2 tbsp soy sauce
- 2 tbsp black vinegar
- 1/2 tbsp cornstarch
- 💧 50cc water
STEPS
Cut the red paprika into bite-sized pieces, slice the zucchini into 1cm widths, and cut the onion into 2cm vertical slices.
Mix all sauce ingredients (☆) in a bowl.
Pat the horse mackerel fillets dry with paper towels, season with salt and pepper, and coat with cornstarch.
Heat 2cm of salad oil in a frying pan to 170°C, fry the pumpkin slices for about 1 minute, then add the vegetables and fry for another minute. Remove cooked items as they are done.
Reheat the oil to 170°C, fry the horse mackerel fillets for about 2 minutes, flipping occasionally until cooked through. Remove and drain excess oil.
Wipe excess oil from the pan with paper towels, add the sauce mixture (☆), and heat over medium heat while stirring until thickened. Add the fried vegetables and fish, mixing well.
