INGREDIENTS
Herb Chicken
- 🍗 300g skinless chicken breast
- đź§‚ 1 tsp sugar
- đź§‚ 1/2 tsp herb salt
- 1 tbsp olive oil
- 1 tsp dried basil
Steamed Vegetables
- 1 yellow bell pepper (150g)
- 1 red bell pepper (150g)
- 🥦 125g broccoli florets
Dressing
- 🥛 3 tbsp plain yogurt
- 3 tbsp mayonnaise
- 1 tbsp olive oil
- đź§‚ 1/2 tsp salt
- Pinch of black pepper
- 🍋 1 tbsp lemon juice
STEPS
Cut yellow and red bell peppers into bite-sized pieces after removing seeds and stems. Separate broccoli into florets.
Slice chicken breast diagonally into 1.5cm thick pieces and place in a storage bag. Add remaining herb chicken ingredients and massage. Refrigerate for 15 minutes.
Mix all dressing ingredients in a bowl until smooth.
Place marinated chicken in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 3 minutes. Add vegetables on top, cover again, and microwave for another 3-4 minutes.
Let the dish cool with the wrap on to finish cooking with residual heat. Serve with dressing poured on top.
