INGREDIENTS
Fish
- 🐟 2 sardines, opened (160g)
Oil
- 1 tbsp salad oil
Sesame
- White sesame seeds, as needed
- Black sesame seeds, as needed
Seasoning
- 1 tbsp soy sauce
- 1 tbsp sake
- 1 tsp grated ginger
Flour Mixture
- 1/2 tbsp flour mixed with water
- 💧 1/2 tbsp water
STEPS
Remove the central bone from the sardines by opening them and washing away the blood and innards under running water. Pat dry.
Place the sardines in a tray and marinate with soy sauce, sake, and grated ginger for about 10 minutes.
Coat the inside of the sardines with the flour-water mixture and sprinkle sesame seeds generously.
Heat salad oil in a frying pan over medium heat. Place the sardines skin-side down and cook until golden brown. Flip and cook the other side similarly.
