- 🐟 2 fillets fresh salmon
- 1/2 yellow bell pepper
- 🧅 1/4 onion
- 🥦 1/2 head broccoli
- 🧂 Pinch of salt and pepper
- Enough all-purpose flour for coating
- 1 tbsp olive oil
Dressing
- 🍯 1 tsp honey
- 2 tbsp vinegar
- 1.5 tbsp olive oil
- 🧂 1/4 tsp salt
- 🧂 Pinch of pepper
- 2 tsp whole grain mustard
STEPS
Season the salmon fillets with salt and pepper, cut into thirds, and coat with flour.
Cut the yellow bell pepper into 8 vertical slices and the onion into wedges.
Separate the broccoli into small florets, place in a microwave-safe container, add 1 tbsp water, cover loosely with plastic wrap, and microwave at 600W for 1 minute.
Mix all dressing ingredients in a bowl until well combined.
Heat olive oil in a frying pan over medium heat, add salmon, bell pepper, onion, and broccoli, and cook for about 5 minutes until golden brown.
Plate the cooked ingredients and drizzle with honey mustard dressing.
