- 2 cleaned Pacific saury (220g)

- 1 tbsp vegetable oil
Scallion Miso Sauce
- đź§… 1/3 scallion (55g), minced
- 🍬 1 tsp sugar
- 🍋 1/2 tbsp lemon juice
- 1 1/2 tbsp miso
- đź’§ 1/2 tbsp water
STEPS
Pat the Pacific saury dry with a paper towel. Cut into halves and sprinkle with salt.
Mince the scallion finely.
In a bowl, mix sugar, lemon juice, miso, and water thoroughly. Add the minced scallion and mix to create the scallion miso sauce.
Heat vegetable oil in a frying pan over medium heat. Add the Pacific saury and cook for 2–3 minutes on each side until fully cooked.
Plate the cooked Pacific saury and drizzle with scallion miso sauce.
