INGREDIENTS
Fish
- 🐟 2 fillets Pacific saury
- 🍅 1 tomato, sliced
- 🧂 Pinch of salt
- 3 tbsp olive oil
- 🧈 10g salted butter
Herb Breadcrumbs
- 4 tbsp dried breadcrumbs
- 1 tbsp chopped parsley
- 🧀 1 tbsp grated cheese
- 1 tbsp olive oil
- 🧄 1/2 tsp grated garlic
STEPS
Cut the Pacific saury into halves. Sprinkle with salt and let sit for 5 minutes, then pat dry. Slice the tomato into 1cm thick pieces.
Mix all the herb breadcrumb ingredients in a bowl.
Line a baking tray with aluminum foil and lightly grease with salad oil. Layer the Pacific saury, tomato slices, and herb breadcrumbs alternately.
Top with pieces of butter and drizzle olive oil over the layers. Bake in a toaster oven for about 10 minutes until the fish is cooked through.
