Preheat an outdoor grill to medium-high heat and lightly oil the grate.

Whisk together olive oil, lemon juice, garlic, salt, smoked paprika, brown sugar, chili powder, and black pepper in a bowl; set aside.

Remove the tough bottom leaves from each cauliflower head, ensuring the stem remains intact. Slice the cauliflower vertically through the stem into 1 to 1½-inch thick 'steaks'. Remove any small leaves from each steak.

Brush one side of each cauliflower steak with the prepared oil mixture. Place steaks oiled-side-down onto the preheated grill. Grill for 5 minutes.

Brush the top side with more oil mixture, gently flip the steaks, and continue grilling until golden brown and slightly charred, 5 to 7 minutes. Drizzle with the remaining oil mixture and remove the steaks to a plate. Sprinkle with cilantro if desired.
