Preheat the oven to 400°F (200°C). Grease cookie sheets.

In a large bowl, cream together the lard and sugar. Beat in the eggs one at a time, then stir in the buttermilk. Combine the flour, baking soda, nutmeg, and salt. Stir into the wet mixture by hand using a wooden spoon. Refrigerate the dough if using a cutter.

Drop spoonfuls of dough onto prepared sheet or roll out refrigerated dough and cut into shapes with a floured cutter.
