Cut the goya in half lengthwise, remove seeds and pith, and slice thinly. Rub with 1/3 tsp salt, rinse with water, and drain.

Place bean sprouts in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 2 minutes. Drain and let cool.

Mix the dressing ingredients (sugar, vinegar, soy sauce, sesame oil) in a bowl. Add goya, bean sprouts, and tuna, then toss to combine.
