INGREDIENTS
Fish
- 🐟 2 fillets of cod
- 🧂 Pinch of salt and pepper
- Enough flour for coating
- 2 tsp olive oil for frying
- 1 tbsp sake
- 🌿 Chopped parsley as needed
Fresh Tomato Sauce
- 🍅 1 tomato, diced (200g)
- 🧅 1/4 onion, minced
- 1 tbsp olive oil for sauce
- 🧂 1/4 tsp salt for sauce
- 🧂 Pinch of pepper for sauce
STEPS
Dice the tomato into 1 cm cubes. Mince the onion and soak it in water, then squeeze out the excess moisture.
Mix the sauce ingredients in a bowl, then add the tomato and onion to create the fresh tomato sauce.
Pat the cod dry with paper towels, season with salt and pepper, and coat with flour.
Heat olive oil in a frying pan, place the cod skin-side down, and fry until golden on both sides. Add sake, cover, and steam for 2 minutes.
Plate the cod, pour the fresh tomato sauce over it, and garnish with chopped parsley.
