INGREDIENTS

- 🥔 1 medium potato (150g), peeled and diced
- 🌱 40g snap peas, trimmed and halved
Dressing
- 🍬 1/2 tsp sugar
- đź§‚ 1 pinch salt
- 🍶 1 tbsp vinegar
- 🥫 1 tbsp mayonnaise
- A dash of pepper
STEPS
Trim the snap peas and cut them diagonally in half. Peel and dice the potato into bite-sized pieces, then soak in water to remove excess starch.
Bring a pot of water to a boil. Add the diced potato and cook until a skewer easily pierces through. Add the snap peas and blanch briefly until vibrant green. Drain and let cool slightly.
In a bowl, mix the dressing ingredients (sugar, salt, vinegar, mayonnaise, and pepper). Toss the cooked potato and snap peas with the dressing until evenly coated.
