  • Dry Ingredients

    • 1 cup whole wheat pastry flour
    • ½ cup old-fashioned rolled oats
    • 2 teaspoons baking powder

    • ÂĽ cup canola oil
    • 🥚 1 egg, lightly beaten
    • ÂĽ cup honey
  • Sweetener

    • ÂĽ cup white sugar
  • Fruit

    • 1 cup diced fresh figs

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper and lightly sprinkle flour over it.

Mix the dry ingredients (flour, oats, baking powder, and salt) in a bowl. In another bowl, whisk together oil and egg until smooth. Add honey and mix well.

Combine the wet ingredients with the dry ingredients until just moistened. Toss figs with sugar in a separate bowl, then fold into the batter.

Place the batter onto the prepared baking sheet and shape into a 7-inch circle.

Bake for 10 minutes. Score the batter into 8 sections. Continue baking for another 20 minutes until cooked through and lightly browned.

Remove from the oven, cut into 8 scones, and slide every other scone back from the circle. Allow to cool before serving.
