Enoki and Fried Tofu Sesame Miso Soup

INGREDIENTS

  • Vegetables

    • 🍄 1/2 pack enoki mushrooms
    • 🥬 1/3 pack spinach
  • Protein

    • 1 sheet fried tofu
  • Seasoning

    • 1/2 tsp Japanese dashi powder
    • 2 tbsp miso paste
    • 🌰 1 tbsp ground white sesame
  • Liquid

    • đź’§ 400 ml water

STEPS

Trim the root of enoki mushrooms, cut them in half, and separate them. Wipe excess oil from the fried tofu and slice it thinly.

Rinse spinach with water, wrap in plastic wrap, and microwave at 600W for 1 minute. Cool in cold water, squeeze out excess water, trim the roots, and cut into bite-sized pieces.

In a pot, add dashi powder and water, heat over medium heat. Once boiling, add enoki mushrooms and fried tofu, and simmer for about 2 minutes.

Dissolve miso paste into the soup, then add spinach and ground sesame. Warm through before serving.
