Cut the eggplants lengthwise into thirds, leaving the stem intact. Remove the calyx. Mince the garlic.

Heat 1/2 tbsp olive oil in a pan, add garlic, and sauté until fragrant. Add ground pork and cook over medium heat until browned. Season with salt, pepper, and ketchup, then cook for another minute. Remove from heat.

Place the eggplants on a toaster oven tray, brush with 1 tbsp olive oil, and toast for 5 minutes. Remove, top with the cooked pork mixture and pizza cheese, then toast again for 6–7 minutes until the cheese is golden and bubbly.
