    • 🍆 1 whole eggplant
    • 3 tbsp potato starch
    • 300 ml vegetable oil
  • Shrimp Mixture

    • 🍤 100 g peeled shrimp
    • đź§… 30 g minced green onion
    • 1 tbsp sake
    • 1 tsp grated ginger
    • đź§‚ 1/3 tsp salt
    • A pinch of pepper
    • 1 tbsp potato starch
  • Sweet Chili Sauce

    • 2 tbsp sweet chili sauce
    • 🌿 5 g chopped cilantro

STEPS

Mince the green onion. Cut the eggplant in half and soak in water, then pat dry. Roughly chop the cilantro.

Remove the vein from the shrimp, rinse with water, and pat dry. Chop the shrimp until it becomes a paste-like consistency.

In a bowl, mix all the shrimp mixture ingredients (shrimp, green onion, sake, ginger, salt, pepper, and potato starch).

In another bowl, mix the sweet chili sauce and chopped cilantro.

Coat the eggplant halves with potato starch and spread the shrimp mixture evenly on top.

Heat vegetable oil in a pot to 170°C (340°F). Fry the coated eggplants for 10–15 minutes until cooked through.
