  • Meat

    • 200g ground meat
  • Seasonings

    • 2 tablespoons miso
    • 1 tablespoon mirin
    • 1 teaspoon soy sauce
    • đź§‚ 1 teaspoon sugar

Cut the eggplants into bite-sized pieces, soak them in water for about 15 minutes to remove bitterness, then drain and pat dry.

Add ground meat to a pot and stir-fry over medium heat. Once the meat changes color, remove it from the pot.

Add the eggplants to the pot, return the ground meat, and mix in the miso, mirin, soy sauce, and sugar.

Simmer on low heat for about 5–7 minutes. Once the eggplants have absorbed the flavors, it’s ready to serve.
