INGREDIENTS
Main Ingredients
- 🥚 3 eggs
- đź’§ 3-4 cups water
- đź§… 1 tbsp chopped green onion
- đź§‚ 1 pinch salt
- 1 tsp fish sauce
Broth Ingredients
- 1 piece kombu (5cm x 5cm)
- 8 dried anchovies
STEPS
Beat the eggs with a pinch of salt until well mixed.
In a pot, add water, kombu, and anchovies. Bring to a boil over high heat, then reduce to medium-low and simmer for 10-15 minutes to make the broth.
After 10-15 minutes, remove the kombu and anchovies from the broth. Add 1 tsp fish sauce.
Pour the beaten eggs into the pot in a circular motion over medium heat.
After 30 seconds, gently stir the soup. For chunkier eggs, stir less; for finer eggs, stir more quickly.
Turn off the heat, add 1 tbsp chopped green onion, and adjust seasoning with salt if needed.
