INGREDIENTS
Broth
- đź’§ 8 cups water
- 1 handful dried anchovies
- 1 sheet kombu
Main Ingredients
- 🥔 2 small potatoes, peeled and sliced
- đź§… 1 stalk green onion, sliced
- 🥚 1 egg, beaten
- 1 tbsp soy sauce
- đź§‚ Pinch of salt
- Pinch of pepper
STEPS
Boil 8 cups of water with 1 handful of dried anchovies and 1 sheet of kombu. Simmer for 10 minutes, then strain out the solids.
Pour 4 cups of the prepared broth into a pot.
Peel and slice 2 small potatoes into 0.5 cm thick pieces. Slice 1 stalk of green onion.
Add the potatoes and the white part of the green onion to the pot and bring to a boil.
Skim off any foam that forms on the surface.
Season the soup with 1 tbsp soy sauce.
Beat 1 egg and pour it into the boiling soup in a circular motion.
Add the green part of the green onion and season with a pinch of salt and pepper.
