  • Choux Pastry

    • 💧 1 cup water
    • 🧈 ½ cup butter
    • 1 cup all-purpose flour
    • 🧂 ¼ teaspoon salt
    • 🥚 4 large eggs
  • Filling

    • 🥛 2 ½ cups cold milk
    • 1 (5 ounce) package instant vanilla pudding mix
    • 🥛 1 cup heavy cream
    • ¼ cup confectioners' sugar
    • 1 teaspoon vanilla extract
  • Chocolate Icing

    • 🍫 2 (1 ounce) squares semisweet chocolate
    • 🧈 2 tablespoons butter
    • 1 cup confectioners' sugar
    • 1 teaspoon vanilla extract
    • 💧 3 tablespoons hot water

Preheat the oven to 450°F (230°C). Grease a cookie sheet and set aside.

Combine water and butter in a medium pot. Bring to a boil, stirring until butter melts completely. Reduce heat to low and add flour and salt. Stir vigorously until mixture forms a stiff ball.

Add eggs one at a time, beating well after each addition. Pipe or spoon dough onto the prepared cookie sheet in 1 1/2x4-inch strips.

Bake in the oven at 450°F (230°C) for 15 minutes. Reduce heat to 325°F (165°C) and bake for another 20 minutes until hollow sounding. Cool completely on a wire rack.

Make filling: Prepare pudding mix with milk according to package directions. Beat heavy cream with confectioners' sugar and vanilla until soft peaks form, then fold it into pudding.

Cut tops off cooled pastry shells and fill them with pudding mixture. Replace tops.

Make icing: Melt chocolate and butter over low heat. Mix in confectioners' sugar, vanilla, and hot water until smooth. Cool slightly and drizzle over filled eclairs.
