INGREDIENTS

- 1 tablespoon olive oil
- 🧈 1 tablespoon unsalted butter
Vegetables
- 🧅 1 cup red onion, chopped
- 1 1/2 cups sliced mushrooms
- 2 large zucchini, sliced
- 🧄 1 tablespoon minced garlic
Seasonings
- 1 teaspoon Italian herb seasoning
- Salt and pepper to taste
Cheese
- 🧀 1/4 cup grated Parmesan cheese
STEPS
Heat olive oil and butter in a large skillet over medium-high heat until the butter melts and begins to bubble.
Add onions, mushrooms, and bell peppers to the skillet. Season lightly with salt and pepper. Cook, stirring frequently, for about 2 minutes.
Add zucchini, garlic, and Italian seasoning. Stir to combine and cook for 4 minutes, stirring often.
Continue cooking and stirring until the vegetables are tender, about another 5 to 8 minutes total.
Remove from heat, sprinkle with grated Parmesan cheese, and garnish with fresh parsley sprigs. Serve warm.
