Cut chicken thigh into bite-sized pieces, season with salt and pepper, and coat with cornstarch.

Mix the sauce ingredients (sake, sugar, soy sauce, gochujang, garlic, ginger) in a plastic bag, then add chicken and bean sprouts. Massage to combine.

Place the marinated ingredients in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 7–9 minutes until the chicken is cooked.

Stir the cooked ingredients, tear the cheese slices, place them on top, cover loosely again, and microwave at 600W for 2 minutes. Garnish with chopped green onion.
