Sauce
- 2 ½ cups water
- 1 tablespoon concentrated beef base (paste)
- 2 tablespoons dry red wine
- 1 teaspoon finely chopped fresh thyme
- 1 teaspoon dried oregano
- 🧄 ½ teaspoon garlic powder
- 🧅 ½ medium white onion, coarsely chopped
- 🥕 ½ medium carrot, peeled and coarsely chopped
- 1 stalk celery, quartered
STEPS
Preheat the oven to 350°F (175°C). Trim any thick pieces of dense, hard fat from the roast, but leave smaller areas of fat intact.
Mix beef base and garlic together in a bowl. Combine thyme, oregano, peppercorns, and salt in another bowl. Rub the beef base mixture generously over the roast, then sprinkle with the herb mixture. Place the roast into a roasting pan.
Roast in the preheated oven until the meat develops a brown crust, approximately 3 hours. Check for medium-rare using an instant-read thermometer inserted into the thickest part of the roast (target temperature: 130°F/54°C). Remove from the oven and let rest.
For the sauce: Whisk water and beef base together in a saucepan over medium-low heat until dissolved. Add red wine, thyme, oregano, and garlic powder. Incorporate onion, carrot, and celery; bring to a boil. Simmer until reduced by half, about 20–30 minutes. Strain the sauce and discard the vegetables.
