INGREDIENTS

- 1 piece hanpen
- 🥚 2 eggs
- 🍬 30g sugar
- 1 tbsp mirin
- đź§‚ Pinch of salt
STEPS
Place the hanpen in a plastic bag and mash it until smooth using your hands.
Transfer the mashed hanpen to a bowl and mix in sugar, mirin, and salt.
Add eggs to the mixture and stir until smooth. Pour into a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 1 minute. Stir the mixture and microwave for an additional 2-3 minutes until set. Wrap the cooked mixture in plastic wrap and shape into a cylindrical form.
Lay out plastic wrap and place 6 chopsticks at 1cm intervals. Roll the egg mixture with the chopsticks to create the traditional datemaki shape. Let it cool completely before slicing into bite-sized pieces.
