    • 150g daikon, peeled and sliced
    • 5 shiso leaves, thinly sliced
  • Seasoning

    • 3g dried shredded kombu
    • 1 tbsp vinegar
    • 🍬 1 tsp sugar
    • đź§‚ 1/3 tsp salt

Peel the daikon and cut it into quarters lengthwise. Slice each quarter into 5mm thick pieces.

Cut off the stems of the shiso leaves and slice them thinly.

In a bowl, mix the vinegar, sugar, salt, and dried shredded kombu.

Add the daikon slices and shiso to the bowl and mix thoroughly.

Cover the bowl with cling wrap, pressing it down to make contact with the mixture, and refrigerate for 1 hour.
