Daikon and Enoki Chinese Soup

INGREDIENTS

  • Vegetables

    • 180g peeled and julienned daikon
    • 100g enoki mushrooms, halved and separated
    • 1/2 tbsp chopped green onion
  • Liquid

    • 400ml water
  • Seasoning

    • 1/2 tsp chicken stock powder
    • đź§‚ 1/3 tsp salt
    • Pinch of pepper
    • Dash of chili oil

Peel and julienne the daikon. Cut off the root of the enoki mushrooms, halve them, and separate them by hand.

In a pot, heat water and daikon over medium heat. Once boiling, add chicken stock powder and enoki mushrooms. Simmer on low heat for about 3 minutes until the daikon softens.

Season with salt and pepper to taste. Serve in bowls, drizzle with chili oil, and garnish with chopped green onion.
