INGREDIENTS
Fish
- 🐟 200g horse mackerel fillets
- 🧂 1/4 tsp salt
- 1/2 tsp olive oil
Curry Panko
- 🍞 4 tbsp panko breadcrumbs
- 🧀 1 tbsp grated Parmesan cheese
- 1 tbsp olive oil
- 1 tsp curry powder
- 1/2 tbsp dried oregano
STEPS
Mix all ingredients for the curry panko (breadcrumbs, Parmesan cheese, olive oil, curry powder, and oregano) in a bowl.
Pat the horse mackerel fillets dry with a paper towel and sprinkle with salt.
Lightly coat a heatproof dish with 1/2 tsp olive oil and place the horse mackerel fillets skin-side down. Spread the curry panko mixture evenly over the fillets.
Cover the dish with aluminum foil and bake in a toaster oven for 10–15 minutes, or until the fish is cooked through.
