    • Adequate amount of boiling water

STEPS

Clean the cucumbers by scrubbing them with coarse salt, then cut them into quarters.

Brine the cucumber pieces with 1 tbsp of coarse salt for 30 minutes until water is released.

Rinse the brined cucumbers under running water, then pour boiling water over them and rinse again. Drain thoroughly.

Cut the chives into 4 cm lengths, and julienne the onion and carrot.

In a large bowl, combine cucumbers, chives, onion, and carrot. Add red pepper powder, minced garlic, anchovy sauce, plum extract, sugar, and sesame seeds.
