    • 20g dried shirasu
    • 🥔 1 medium potato (200g), julienned
    • đź§… 6 stalks green onion, thinly sliced
    • 1 tbsp all-purpose flour
    • Enough vegetable oil for frying

    • đź’§ 70cc cold water
    • 4 tbsp all-purpose flour
    • 2 tbsp potato starch
    • đź§‚ 1/4 tsp salt

Julienne the potato and soak in water for 5 minutes. Drain and pat dry. Slice the green onions thinly at an angle.

Place shirasu, potato, green onions, and 1 tbsp flour into a plastic bag. Shake to coat evenly with flour.

In a bowl, mix the batter ingredients (cold water, flour, potato starch, and salt). Add the coated potato mixture and gently combine.

Heat vegetable oil to 180°C in a frying pan, about 3cm deep. Drop 1/4 of the mixture using a spatula into the oil. Fry for 1-2 minutes until the surface sets, then flip and fry for another 3 minutes until golden brown.
