INGREDIENTS
Enoki Mushroom Egg Pancake Ingredients
- 🍄 1 pack enoki mushrooms
- sufficient amount of pancake flour
- 2 chili peppers, chopped
- 🥚 2 eggs
- đź§‚ a pinch of salt
- generous amount of olive oil
Soy Sauce Dip Ingredients
- a small amount of green scallion
- 2 tbsp soy sauce
- 1/2 tbsp maple syrup
- 🍋 1 tbsp lemon juice
- 2 tbsp vinegar
- a small amount of sesame seeds
STEPS
Trim the base of 1 pack of enoki mushrooms and rinse them.
Spread the enoki mushrooms flat on a surface.
Sift a sufficient amount of pancake flour over the mushrooms evenly.
Flip the mushrooms and coat the other side with pancake flour.
Chop 2 chili peppers and mix them with 2 eggs and a pinch of salt in a bowl.
Prepare the egg mixture by whisking thoroughly.
Dip the flour-coated enoki mushrooms into the egg mixture.
Heat a generous amount of olive oil in a frying pan and place the egg-coated mushrooms in.
Cook until both sides are golden and crispy.
Prepare the soy sauce dip by mixing scallion, soy sauce, maple syrup, lemon juice, vinegar, and sesame seeds.
Plate the crispy enoki mushroom egg pancake and serve with the soy sauce dip.
