Cut potatoes into bite-sized pieces and soak in water. Drain and place in a microwave-safe container. Cover loosely with plastic wrap and microwave at 600W for 5 minutes. Mash while hot, add seasonings, and mix. Let cool.

Divide half of the pizza cheese (50g) into 8 portions and shape into small balls.

Take 1/8 of the potato mixture, flatten it, and place a cheese ball in the center. Wrap and shape into a ball. Repeat to make 8 mochi balls.

Heat salad oil in a frying pan over medium heat. Arrange the mochi balls and cook for about 5 minutes, flipping until both sides are golden brown. Push mochi to the side, add remaining cheese (50g) in 8 portions, place mochi on top, and cook on low heat for 3 minutes until cheese crisps.
