STEPS
Preheat oven to 375°F (190°C) and place a baking sheet under the middle rack to catch drips. Generously butter a 2-quart baking dish.
Arrange peach sections in the prepared baking dish. Sprinkle with lemon juice and zest.
Cream butter and sugar together until it forms a sugary, buttery paste (4–5 minutes). Gradually mix in oats and flour until combined into coarse crumbs. Pour in milk and mix to create a thick batter (3–4 minutes).
Drop spoonfuls of batter over the peaches and spread evenly. Sprinkle sugar on top and mist with water until sugar glistens.
Bake on the middle rack for approximately 45 minutes until browned and crispy. Let cool for at least 30 minutes before serving.
