INGREDIENTS
Protein
- 🍗 300g chicken breast
- 🥓 2 slices bacon
Vegetables
- 6 snow peas
- đź§„ 1 clove garlic
Dairy
- đź§€ 50g cream cheese
- đź§€ 2 tbsp grated Parmesan cheese
Seasoning
- 1 tsp dried basil
- đź§‚ 1/3 tsp salt
- Pinch of pepper
- 🍋 1 tsp lemon juice
- 1 tbsp olive oil
- 1 tbsp sake
STEPS
Remove the strings from the snow peas and finely chop them.
Finely chop the garlic.
Slice the chicken breast horizontally and flatten it with a rolling pin to even out the thickness.
Mix all the marinade ingredients (dried basil, garlic, sake, salt, pepper, lemon juice, olive oil) in a resealable bag.
Add the chicken to the marinade and refrigerate for 30 minutes.
Finely chop the bacon and microwave it in a heatproof bowl for 1 minute at 600W.
Mix the cooked bacon, snow peas, cream cheese, and Parmesan cheese in a bowl.
Place the filling on one side of the flattened chicken breast and fold the other side over. Secure with toothpicks.
Heat a frying pan over medium heat and cook the chicken until golden brown on both sides.
Cover the pan and cook on low heat for 8-10 minutes until the chicken is fully cooked. Remove toothpicks and slice into serving pieces.
