    • 7–8 tbsp perilla powder

Blanch the burdock stems, trim them, and cut into bite-sized pieces. Place them in a pot.

Add perilla oil, salt, minced garlic, and soy sauce to the pot.

Slice the green chili and red chili, add them to the pot, and sauté for 3 minutes. Then pour in the kelp broth and bring to a boil.

Skim off any foam from the surface, then dissolve the perilla powder into the soup. Taste and adjust seasoning with additional salt if needed.

Simmer for 2–3 minutes, turn off the heat, and let the soup cool completely. Store in the refrigerator and serve chilled.
