INGREDIENTS
Dough
- 3 cups all-purpose flour
- 1 (.25 ounce) package instant yeast
- 1/4 cup granulated sugar
- 1 1/4 teaspoons kosher salt
- 1/4 teaspoon ground cinnamon

- 🧈 5 tablespoons unsalted butter, at room temperature
- 1 1/2 teaspoons vanilla extract
- Cooking spray
Filling
- 1/2 cup firmly packed light brown sugar
- 1/4 cup all-purpose flour
- 4 teaspoons ground cinnamon
- 🧈 1/4 cup unsalted butter, melted and cooled
Egg Wash
- 🥚 1 large egg yolk
- 1 tablespoon tap water
Topping
- 2 tablespoons all-purpose flour
- 1 tablespoon firmly packed light brown sugar
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon kosher salt
- 🧈 2 tablespoons cold unsalted butter
STEPS
Combine flour, yeast, sugar, salt, and cinnamon in the mixer bowl. Add egg, warm water, butter, and vanilla, and mix until dough is smooth.
Spray a large bowl with cooking spray, place dough inside, and let rise in a warm place until doubled in size.
Punch down dough and roll into a rectangle. Let rest uncovered for 10 minutes.
Prepare the filling by combining sugar, flour, and cinnamon, then stir in melted butter.
Spread filling evenly on the dough, leaving a 1/2-inch border. Roll dough into a log and cut lengthwise. Twist pieces, place into a prepared pan, and brush with egg wash.
For the topping, mix flour, sugar, cinnamon, and salt, then work in cold butter to form crumbs. Sprinkle topping over loaf and let rise until doubled.
Bake in a preheated oven for 45 minutes, covering with foil after 25 minutes.
Let the bread cool for 10 minutes in the pan and another 20 minutes outside the pan before serving.
