    • 1 jalapeno pepper, seeded and finely chopped
    • 🧅 1/2 small red onion, finely chopped
    • 1/2 bunch fresh cilantro, chopped
    • 2 cloves garlic, minced
  • Seasonings and Condiments

    • 🧈 1/4 cup butter, melted
    • 🧂 Salt and freshly ground black pepper to taste
    • 1 pinch salt-free lemon-herb seasoning

Peel back corn husks without removing them entirely. Remove the silks, then fold the husks back up. Place corn on a microwave-safe plate and cook in the microwave on high for 5 minutes, flipping once halfway through.

Let the corn cool, then slice the kernels off the cob and place into a serving bowl.

Stir melted butter into the corn. Add tomatoes, jalapeno, red onion, garlic, and cilantro. Season with salt, pepper, and lemon-herb seasoning. Mix thoroughly and adjust seasoning to taste. Chill before serving if preferred.
