    • 30g vermicelli
    • 🍤 6 peeled shrimp (90g)
    • 30g cilantro
    • đź§… 1/6 red onion, thinly sliced
    • 🍅 4 cherry tomatoes, quartered
    • 🥜 2 tbsp peanuts, chopped
  • Dressing

    • 1 tbsp fish sauce
    • đź§‚ 1/2 tbsp sugar
    • 🍋 1 tbsp lemon juice
    • 2 tsp sliced chili
    • 1/2 tbsp sesame oil

Cut cilantro into 2cm pieces. Thinly slice red onion and soak in water, then drain. Quarter cherry tomatoes. Chop peanuts.

Boil water in a pot, cook vermicelli for about 2 minutes, drain, and cut into manageable lengths.

Reboil water in the same pot, cook peeled shrimp briefly, then drain.

Mix dressing ingredients in a bowl. Add all ingredients except peanuts and toss well.

Plate the salad and sprinkle chopped peanuts on top.
