INGREDIENTS
Rice

Seaweed

Pickled Radish
- 1 cup sliced radish
- 1 tbsp sugar
- 1 tbsp vinegar

Radish Seasoning
- 2 tbsp chili powder
- 1/2 tbsp fish sauce
- 1/2 tbsp sugar
- đź§‚ 1 tbsp salt
- đź§„ 1/2 tbsp minced garlic
- đź§… 1/2 tbsp minced green onion
- 1/4 tsp black pepper
Squid Seasoning
- 1 cup boiled squid
- 2 tbsp chili powder
- 1/2 tbsp fish sauce
- 1 tbsp sugar
- đź§‚ 1/2 tsp salt
- đź§„ 1 tbsp minced garlic
- đź§… 1 tbsp minced green onion
- 1/2 tbsp mirin
- 1/2 tbsp corn syrup
- 1 tbsp sesame oil
- 1 tbsp sesame seeds
STEPS
Cook rice with a piece of kelp for added flavor and shine.
Slice radish thinly and mix with sugar, vinegar, and salt. Let it sit for 30 minutes.
Add chili powder, fish sauce, sugar, salt, garlic, green onion, and black pepper to the pickled radish.
Boil squid briefly and slice into bite-sized pieces.
Mix boiled squid with chili powder, fish sauce, sugar, salt, garlic, green onion, mirin, corn syrup, sesame oil, and sesame seeds.
Prepare seaweed and roll rice into small gimbap pieces.
