INGREDIENTS

- 300g firm tofu
- 50g cod roe
Vegetables
- 🍆 160g eggplant, diced
Seasonings
- 1 tsp sake
- 1/2 tbsp soy sauce
Cooking Oil
- 1 tbsp salad oil
STEPS
Wrap the tofu in kitchen paper and place it in a microwave-safe container. Heat in a 600W microwave for about 2 minutes, then let it cool. Cut the eggplant into 1.5cm cubes.
Make a slit in the cod roe and extract the contents.
Heat salad oil in a frying pan over medium heat. Tear the tofu into bite-sized pieces and stir-fry until browned. Add the eggplant and stir-fry for 2–3 minutes. Add the cod roe, sake, and soy sauce, then mix well.
