INGREDIENTS
Main Ingredients
- 🥚 4 eggs
- 🍅 6 tomatoes
- đź§… 1 handful green onions
Seasonings
- 1 tbsp soy sauce
- 1 tbsp oyster sauce
- đź§‚ A pinch of salt
Cooking Oil
- 2 tbsp cooking oil
STEPS
Slice the tomatoes into 1cm thick pieces.
Chop the green onions into small pieces.
Heat a pan with some cooking oil and scramble the eggs. Set aside.
In the same pan, heat more cooking oil and stir-fry the green onions over medium heat to make scallion oil.
Add the sliced tomatoes to the pan and stir-fry.
Add soy sauce and oyster sauce to the pan and let it slightly caramelize over medium heat.
Once the sauces are caramelized, stir-fry the tomatoes thoroughly.
Add the scrambled eggs back into the pan and mix well with the tomatoes.
Optionally, drizzle a small amount of sesame oil for added flavor.
