Cut the green peppers in half lengthwise, remove seeds and pith, and slice thinly crosswise.

Slice the chikuwa diagonally into 7mm pieces. Make a cut in the mentaiko skin and extract the contents.

Place the green peppers and sake in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 1–1.5 minutes. Drain excess liquid and let cool slightly.

Combine the chikuwa, green peppers, and mentaiko in a bowl and mix well.
