INGREDIENTS
Vegetables
- 120g canned chickpeas
- 8 okra pods
- 🍅 5 cherry tomatoes
Spices
- đź§„ 1/2 tsp grated garlic
- 1/4 tsp grated ginger
- 1/2 tbsp curry powder
- đź§‚ 1/4 tsp salt
- Pinch of black pepper
Liquids
- 1/2 tbsp olive oil
- 1 tbsp sake
STEPS
Trim the okra and slice into 1cm pieces. Halve the cherry tomatoes.
Heat olive oil in a pan over medium heat. Add okra, chickpeas, garlic, and ginger. Stir-fry for about 1 minute until the okra is cooked.
Add the seasoning ingredients (sake, curry powder, salt, and pepper) along with the cherry tomatoes. Stir-fry until well combined.
